Ingredients

  • 3 Eggs
  • 1/2 Cup Roughly Sliced Onion
  • 1 Cup Tomato
  • 1/2 Cup Roughly Chopped Green Bell Pepper
  • 2 Teaspoons Minced Garlic
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Roasted Cumin Powder
  • 1 Teaspoon Paprika
  • 1 Tablespoon Coriander Leaves
  • Salt and Pepper (to taste)
  • 1 Tablespoon Oil

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add chopped onions, garlic, tomatoes, and bell peppers. Sauté for 1 minute.
  3. Add coriander powder, cumin powder, paprika, salt, and pepper. Mix well and sauté for another minute.
  4. Create space in the pan for eggs and crack them into the pan. Cover the pan and cook for 2-3 minutes or until the eggs are done to your liking.
  5. Once the eggs are cooked, garnish with fresh coriander leaves and serve hot.

Notes

  • If you prefer a milder flavor, reduce or skip the spices.
  • This omelette can be served with warm bread, naan, or eaten on its own.
  • Feel free to add additional ingredients like cheese or proteins for a heartier dish.
