Apple Brownies (Apple Blondies) are chewy, buttery dessert bars filled with chunks of tart apples, warm cinnamon, and toasted pecans. They deliver the comforting flavors of apple pie in the soft, dense texture of a blondie—perfect for fall gatherings or cozy afternoons.

Ingredients

  • 1/2 cup salted butter, room temperature 
  • 1 cup sugar 
  • 1 large egg
  • 1 cup all-purpose flour 
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup chopped apple pieces 
  • 1/2 cup toasted pecan pieces 

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking dish with butter, baking spray, or parchment paper.
  2. Toast pecans in a small skillet over medium heat until fragrant, then set aside to cool.
  3. Peel, core, and chop apples into 1/2-inch chunks to yield 1 cup of apple pieces.
  4. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  5. Add the egg and mix until fully combined.
  6. Add flour, baking powder, salt, and cinnamon, mixing just until no white streaks remain.
  7. Fold in the chopped apples and toasted pecans; the batter will be thick and sticky.
  8. Spread batter evenly into the prepared pan, smoothing the top.
  9. Bake for 30–45 minutes or until the top is golden brown and the edges pull away from the sides of the pan.
  10. Cool for at least 15 minutes before slicing into squares. Serve warm or at room temperature.

Notes

  • Use a mix of tart and sweet apples, such as Granny Smith and Honeycrisp, for balanced flavor.
  • Do not add more than 1 cup of apples or the bars may become too moist.
  • Substitute pecans with walnuts or omit for a nut-free version.
  • Store at room temperature for up to 2 days or freeze for up to 3 months.
