This Apple Crumble Cheesecake combines a buttery graham cracker crust, a creamy cheesecake layer, a sweet spiced apple filling, and a crispy crumble topping. It’s a comforting dessert perfect for holidays or any time you crave a layered treat.

Ingredients

  • 2 cups graham cracker crumbs

  • 1/2 cup unsalted butter, melted

  • 2 tablespoons granulated sugar

  • 24 oz cream cheese, softened

  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 3 large eggs

  • 1 cup sour cream

  • 3 medium apples, peeled and diced

  • 1/3 cup brown sugar

  • 1 teaspoon cinnamon

  • 2 tablespoons cornstarch

  • 2 tablespoons water

  • 1 tablespoon lemon juice

  • 3/4 cup all-purpose flour

  • 1/2 cup brown sugar

  • 1/2 teaspoon cinnamon

  • 1/2 cup cold unsalted butter, cubed

Instructions

  1. Preheat the oven to 325°F (160°C) and line a 9-inch springform pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and granulated sugar until combined; press into the bottom of the pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a large bowl, beat cream cheese until smooth. Add granulated sugar and vanilla, mix well.
  5. Add eggs one at a time, mixing on low speed and scraping the bowl after each addition.
  6. Fold in sour cream until fully combined. Pour over the cooled crust and smooth the top.
  7. In a saucepan, combine diced apples, brown sugar, cinnamon, lemon juice, and water. Cook over medium heat.
  8. Mix cornstarch with 1 tablespoon cold water and stir into the apple mixture. Cook until thickened (5–7 minutes), then cool slightly.
  9. In a bowl, combine flour, brown sugar, cinnamon, and cubed butter. Mix until crumbly.
  10. Layer the apple mixture over the cheesecake filling, then top with the crumble.
  11. Bake for 65 minutes until the center is slightly jiggly and edges are set.
  12. Turn off the oven, crack the door, and cool for 1 hour. Then chill in the refrigerator for at least 4 hours or overnight.

  • Use full-fat cream cheese for the best texture.
  • Granny Smith apples are ideal for balancing sweetness.
  • To avoid cracks, avoid overmixing once eggs are added and bake with a water bath if possible.
