Eggnog Bread with Rum Glaze

This festive Christmas Eggnog Bread is rich, moist, and packed with warm holiday spices. Finished with a sweet and boozy spiced rum glaze, it’s perfect for seasonal gatherings or as a homemade gift.

Ingredients

  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 2 tsp spiced rum
  • 1 package (3.4 oz) instant French vanilla pudding mix
  • 1.5 cups full-fat eggnog
  • 2 eggs, room temperature
  • 0.5 cup unsalted butter, melted and cooled
  • 0.5 tsp ground nutmeg
  • 2.25 cups all-purpose flour
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 2 tsp eggnog (for glaze)
  • 0.125 tsp ground nutmeg (for glaze)
  • 1 cup confectioners sugar (for glaze)
  • 2 tbsp spiced rum (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a loaf or muffin pan with non-stick spray that contains flour.
  2. In a mixing bowl, combine eggs, eggnog, spiced rum, granulated sugar, vanilla extract, and melted butter. Mix until combined, allowing clumps of butter.
  3. In a separate bowl, sift together flour, pudding mix, baking powder, salt, and nutmeg.
  4. Gradually add the dry ingredients into the wet mixture and stir until just incorporated. Do not overmix.
  5. Pour the batter into the prepared pan(s). For mini loaves, bake for about 30 minutes. For a regular loaf, bake for 55 minutes or until a toothpick inserted comes out clean.
  6. While the bread is baking, whisk together confectioners sugar, eggnog, spiced rum, and nutmeg until smooth to make the glaze.
  7. Once the bread is completely cool, pour the glaze over the top and allow it to set before serving.

Notes

  • Use full-fat eggnog for a richer flavor and moist texture.
  • Do not overmix the batter to avoid dense bread.
  • Glaze should be applied only after the bread is fully cooled.
  • Butter may remain clumpy in the batter but will melt during baking.
  • Mini loaves make excellent gifts during the holiday season.
