Ingredients

  • 1 1/4 pounds carrots (petite or regular, halved if large)
  • 3 tablespoons butter
  • 2 tablespoons honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 1/2 teaspoon fresh thyme (or 1/4 teaspoon dried thyme)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet with nonstick spray.
  2. Arrange the carrots in a single layer on the prepared baking sheet.
  3. In a light-colored saucepan, melt the butter over low heat, whisking constantly until it begins to foam and turns golden brown with a nutty aroma (about 5–14 minutes).
  4. Remove from heat and stir in honey, garlic powder, salt, pepper, and thyme until well combined.
  5. Pour the brown butter mixture over the carrots and toss until evenly coated.
  6. Bake for 25–40 minutes, flipping halfway through, until the carrots are fork-tender and slightly caramelized.
  7. Remove from the oven, sprinkle with chopped parsley, and serve warm.
