Caramel Apple Crisp Bites

These Caramel Apple Crisp Bites are bite-sized desserts featuring a buttery graham cracker crust, spiced apple filling, and a warm caramel drizzle. Perfect for fall gatherings or weeknight treats, they’re easy to make and packed with nostalgic flavor.

Ingredients

  • 2 cups graham cracker crumbs

  • 12 tbsp salted butter, melted

  • ½ cup powdered sugar

  • 4 cups apples, peeled, cored, and chopped

  • ⅓ cup granulated sugar

  • ¼ cup brown sugar

  • 2¼ tbsp all-purpose flour

  • ½ tsp ground cinnamon

  • ¼ tsp ground nutmeg

  • Store-bought caramel sauce, warmed

  • Optional: flaky sea salt for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 24-cup mini muffin tin.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and powdered sugar until combined and sandy in texture.
  3. Scoop 1 tbsp of crust mixture into each muffin cup, pressing it down and slightly up the sides with a spoon or shot glass.
  4. Bake crusts for 6 minutes until just set, then let cool slightly.
  5. In a large bowl, toss chopped apples with granulated sugar, brown sugar, flour, cinnamon, and nutmeg. Let sit for 5 minutes.
  6. Fill each crust with apple mixture, pressing down gently and leaving space at the top.
  7. Bake for 18 minutes, or until apples are tender and bubbling and crust is lightly golden.
  8. Let bites cool in the tin for 10 minutes, then run a knife around edges and lift out.
  9. Drizzle warm caramel sauce over the top and sprinkle with flaky sea salt if desired.

  • Chop apples small (pea-sized) for even cooking.
  • Substitute coconut oil for butter to make dairy-free.
  • Use gluten-free graham crackers and flour to make gluten-free.
  • Pears or peaches can replace some apples, with added thickener.
