Cheesy Broccoli Casserole

A creamy, comforting side dish made with tender broccoli, sharp cheddar cheese, and a crunchy Ritz cracker topping. This cheesy broccoli casserole is perfect for holidays or weeknight dinners, loved by kids and adults alike.

Ingredients

  • 4 cups chopped broccoli
  • 1 (10 ounce) can of cream of chicken soup
  • 1 cup mayonnaise or Miracle Whip
  • 1/4 cup melted butter (1/2 stick)
  • 2 large eggs, slightly beaten
  • 1/2 medium yellow onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups extra sharp cheddar cheese, divided
  • 1/2 sleeve of Ritz crackers, crushed

Instructions

  1. Preheat oven to 350°F.
  2. Place broccoli in a steaming basket and steam for 5 minutes or until tender to a fork.
  3. Remove from stove and chop into bite-sized pieces. Transfer to a medium mixing bowl.
  4. Add soup, mayonnaise, butter, eggs, onion, salt, and pepper to the bowl. Mix well.
  5. Stir in 3/4 cup of shredded cheese into the mixture and combine thoroughly.
  6. Spray an 8×8 inch casserole dish with cooking spray.
  7. Pour the broccoli mixture into the dish and spread evenly.
  8. Top with remaining 3/4 cup cheese and crushed Ritz crackers.
  9. Bake for 30 minutes or until cheese is melted and the top is golden brown.

Notes

  • You can substitute sour cream or Greek yogurt for mayonnaise.
  • Use cream of mushroom soup as an alternative to cream of chicken.
  • Add cooked rice or chicken for a heartier version.
  • Ensure frozen broccoli is thawed and well-drained to avoid excess moisture.
