Ingredients

  • 1½ pounds chicken breast, sliced into thin strips
  • 2 tablespoons extra virgin olive oil
  • 5 garlic cloves, freshly minced
  • 1 teaspoon Mediterranean herb blend
  • ½ teaspoon smoky paprika
  • A pinch of chili flakes
  • Sea salt and cracked black pepper, to taste
  • 1 sweet onion, thinly sliced into half-moons
  • 1 red bell pepper, julienned
  • 2 cups fresh spinach leaves
  • 1½ cups shredded mozzarella
  • ½ cup sharp cheddar, freshly grated
  • 3 tablespoons cream cheese, room temperature
  • 2 tablespoons sour cream
  • 2 teaspoons fresh chives, finely chopped
  • 6 large flour tortillas
  • 1½ tablespoons melted butter
  • ¾ teaspoon roasted garlic powder
  • Olive oil cooking spray

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper, then add to skillet in a single layer. Cook undisturbed for 3 minutes, flip, and cook for another 2–3 minutes until cooked through. Remove and keep warm.
  3. In the same skillet, add onions and cook for 2 minutes. Add minced garlic and cook for 30 seconds.
  4. Stir in herb blend, paprika, and chili flakes. Add bell pepper and cook for 3 minutes.
  5. Return chicken to skillet, mix with vegetables, and fold in spinach until wilted. Remove from heat.
  6. In a bowl, mix mozzarella, cheddar, cream cheese, sour cream, and chives. Reserve some shredded cheese for topping.
  7. Whisk melted butter and garlic powder. Brush one side of each tortilla with this mixture and place buttered side down.
  8. Spread 2 tablespoons cheese mixture in center of each tortilla. Add chicken mixture and sprinkle reserved cheese.
  9. Fold bottom of tortilla over filling, fold in sides, and roll tightly. Set aside seam-side down.
  10. Heat a clean skillet over medium heat. Toast wraps seam-side down for 2–3 minutes per side until golden and crisp. Serve warm.

Notes

  • Let the filling cool slightly before assembling to avoid soggy wraps.
  • Warm tortillas in the microwave for 10 seconds before assembling to prevent cracking.
  • You can freeze un-toasted wraps for up to 3 months; thaw before cooking.
  • Use freshly grated cheese for better melt and texture.
