Cheesy Ground Beef and Potatoes

A comforting one-skillet meal featuring tender diced potatoes, seasoned ground beef, and melted cheddar cheese. Perfect for a quick and hearty family dinner, this dish combines savory, cheesy flavors with minimal cleanup.

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  2. Add the chopped onion and minced garlic to the skillet. Cook for 4 minutes, or until the onion is softened and fragrant.
  3. Add the diced potatoes to the skillet and season with salt, pepper, paprika, and dried oregano. Stir to combine.
  4. Pour in the beef broth and cover the skillet. Reduce the heat to low and cook for 25 minutes, or until the potatoes are tender and the liquid has mostly absorbed.
  5. Sprinkle the shredded cheddar cheese over the beef and potatoes. Cover again and cook for 3 minutes, or until the cheese has melted.
  6. Garnish with freshly chopped parsley before serving.

  • You can substitute ground turkey or chicken for a leaner version.
  • Add bell peppers or mushrooms for extra vegetables and flavor.
  • Use Pepper Jack or Monterey Jack cheese for a spicier or milder cheese variation.
