Crack Chicken Pinwheels

Crack Chicken Pinwheels are a creamy, cheesy, and savory appetizer wrapped in soft tortillas. Perfect for parties, lunchboxes, or a quick make-ahead snack, these bite-sized rolls are packed with shredded chicken, ranch seasoning, bacon, and cheddar cheese.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 4 large flour tortillas
  • Fresh parsley, for garnish (optional)

Instructions

  1. Shred the cooked chicken into small pieces.
  2. In a large bowl, combine shredded chicken, softened cream cheese, cheddar cheese, ranch seasoning mix, crumbled bacon, and chopped green onions.
  3. Mix thoroughly until the filling is evenly blended.
  4. Lay one tortilla flat and spread a portion of the filling evenly across the surface, leaving a 1/2-inch border around the edges.
  5. Roll the tortilla tightly from one end to the other to form a log.
  6. Repeat with the remaining tortillas and filling.
  7. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up.
  8. Remove from the fridge and slice each roll into 1-inch thick pinwheels using a sharp knife.
  9. Arrange on a serving platter and garnish with fresh parsley if desired.

Notes

  • For added heat, mix in diced jalapeños or a splash of hot sauce.
  • Use rotisserie chicken for convenience and extra flavor.
  • Substitute Greek yogurt for a lighter version of the filling.
  • Refrigerating helps maintain shape and enhances flavor.
