Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) whole peeled tomatoes
  • 2 tablespoons tomato paste
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • Optional: Fresh basil or dried herbs for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté until soft and fragrant, about 5 minutes.
  2. Stir in the canned tomatoes and tomato paste, cooking for 2-3 minutes to combine the flavors.
  3. Add the vegetable broth and bring the soup to a simmer. Let it cook for 15-20 minutes, allowing the flavors to develop.
  4. Use an immersion blender to puree the soup to your desired smoothness, or transfer the soup to a blender in batches.
  5. Stir in the heavy cream and season with salt, pepper, and sugar. Taste and adjust the seasoning as needed.
  6. Serve hot, garnished with fresh basil or your favorite herbs.

  • For a lighter version, substitute half-and-half or whole milk for the heavy cream.
