Ingredients

  • 1 lb 95% lean ground beef
  • 1 (1.25 oz) packet reduced sodium taco seasoning
  • 1 medium-large head of iceberg lettuce, chopped into bite-sized pieces
  • 1 medium-large tomato, diced
  • 4 oz 50% reduced-fat sharp cheddar cheese, shredded
  • 4 oz nacho cheese Doritos, crushed slightly
  • 1 cup light Catalina or French dressing

Instructions

  1. Place a skillet over medium heat and brown the ground beef, breaking it up with a wooden spoon as it cooks.
  2. Drain excess fat, then add the taco seasoning and stir to coat the beef evenly. Set aside to cool slightly.
  3. In a large serving bowl, combine the chopped lettuce, diced tomato, shredded cheese, and seasoned beef.
  4. When ready to serve, add the crushed Doritos and pour in the dressing.
  5. Toss everything together gently until evenly coated, then serve immediately for best crunch.

Notes

  • Do not add Doritos and dressing until right before serving to prevent sogginess.
  • French dressing can be used instead of Catalina dressing.
