Ingredients

  • 2 turkey tenderloins (about 1 lb each)
  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)
  • 2 tablespoons fresh thyme, finely chopped (or 1 tablespoon dried)
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine melted butter, minced garlic, chopped rosemary, thyme, paprika, onion powder, lemon zest, lemon juice, olive oil, salt, and pepper. Whisk until well blended.
  2. Place turkey tenderloins in a zip-top bag or shallow dish. Pour marinade over them, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat oven to 400°F (200°C).
  4. Remove turkey from marinade and place in a roasting pan. Pour reserved marinade over the top.
  5. Roast for about 30 minutes or until internal temperature reaches 165°F (74°C), basting halfway through.
  6. Remove from oven and let rest for 10 minutes before slicing.
  7. Serve with your choice of sides and garnish with fresh herbs or lemon wedges if desired.
