Ground Turkey Teriyaki Stir-Fry

A quick and healthy stir-fry made with lean ground turkey, colorful vegetables, and a sweet-savory homemade teriyaki sauce. Perfect for busy weeknights, this one-pan dish is full of flavor, high in protein, and naturally gluten-free when using tamari.

Ingredients

  • 1 lb (450g) lean ground turkey
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium bell peppers, thinly sliced
  • 2 cups (200g) broccoli florets
  • 1 cup (100g) carrots, thinly sliced
  • ½ cup green onions, sliced (for garnish)
  • ¼ cup (60ml) low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. In a bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch slurry. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add the ground turkey and cook for 7 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
  4. Add the minced garlic and grated ginger. Sauté for 2 minutes until fragrant.
  5. Add the sliced bell peppers, broccoli florets, and carrots. Stir and cook for 7 minutes until the vegetables are tender-crisp.
  6. Pour in the prepared teriyaki sauce. Stir well to coat all ingredients and simmer for 3 minutes until the sauce thickens.
  7. Remove from heat, garnish with sliced green onions, and serve hot over rice, quinoa, or noodles.

Notes

  • Use tamari instead of soy sauce for a gluten-free version.
  • Substitute ground turkey with ground chicken or tofu for variation.
  • Add red pepper flakes or sriracha for a spicier version.
  • Double the sauce if serving over absorbent grains like rice.
