Halloween Sugar Cookie Bars are soft, chewy cookie bars topped with creamy buttercream frosting and festive Halloween sprinkles. They are quick to prepare, colorful, and perfect for parties or family gatherings.

Ingredients

  • 1 1/4 cups salted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 1/2 cups powdered sugar
  • 1/2 cup salted butter, softened
  • 2 teaspoons vanilla extract
  • 2–3 tablespoons heavy cream or milk
  • Food coloring
  • Halloween sprinkles

Instructions

  • Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper or grease with cooking spray.
  • Cream 1 1/4 cups softened butter and 1 1/4 cups sugar until light and fluffy.
  • Add 1 egg, 1 egg yolk, and 2 teaspoons vanilla extract. Mix well, scraping the bowl as needed.
  • Stir in 3 cups flour, 1 teaspoon baking powder, and 1/2 teaspoon salt until combined.
  • Press dough evenly into the prepared baking pan.
  • Bake for 20–25 minutes until the edges are lightly golden. Cool completely before frosting.
  • For frosting, beat 1/2 cup softened butter until creamy. Add 3 1/2 cups powdered sugar and beat until smooth.
  • Mix in 2 teaspoons vanilla extract and 2–3 tablespoons cream or milk until spreadable.
  • Add food coloring and blend until the desired color is achieved.
  • Spread frosting over cooled cookie bars and top with sprinkles.
  • Slice into 18 bars and serve.

Notes

  • Do not overbake; bars may look slightly underdone but will set as they cool.
  • Use a parchment sling for easy removal.
  • Bars can be stored at room temperature for 4–5 days or frozen up to 3 months.
  • Substitute milk for cream if needed.
