This Healthy Sparkling Mojito Lemonade is a refreshing non-alcoholic summer mocktail made with peppermint tea, fresh mint, lemon, lime, and sparkling water. It’s naturally sweetened with honey or a vegan substitute and ready in just 15 minutes.

Ingredients

  • 2 cups cold peppermint tea
  • 1/3 cup honey or vegan substitute (agave or maple syrup)
  • 1 handful fresh mint leaves
  • 3 limes, juice and zest
  • 3 lemons, juiced
  • Sparkling water (to top)
  • Fresh mint leaves and lemon or lime wedges, for garnish

Instructions

  1. Add peppermint tea, honey, mint leaves, lime juice and zest, and lemon juice to a blender. Blend on high until smooth.
  2. Strain the mixture into a large pitcher to remove mint bits and pulp.
  3. Fill glasses halfway with the mixture.
  4. Top with sparkling water.
  5. Garnish with fresh mint leaves and a lemon or lime wedge before serving.

Notes

  • Prepare the citrus base up to 3 days in advance and refrigerate; add sparkling water just before serving.
  • Swap honey with agave nectar or maple syrup for a vegan version.
  • Enhance presentation by serving in mason jars with colorful straws.
  • Freeze peppermint tea into ice cubes to avoid dilution.
