A sweet and savory baked side dish that puts a unique spin on traditional corn casserole. Featuring fresh corn, creamed corn, sour cream, and cheddar cheese balanced with a honey glaze, this dish is perfect for holidays or hearty dinners.

Ingredients

  • 2 cups fresh corn kernels (or 1 can of corn, drained)
  • 1 cup creamed corn
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs, beaten
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the fresh corn kernels, creamed corn, sour cream, shredded cheddar cheese, honey, and melted butter. Stir until well mixed.
  3. In a separate bowl, whisk together the cornmeal, baking powder, salt, black pepper, and garlic powder.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix.
  5. Gently fold in the beaten eggs until fully incorporated.
  6. Lightly grease a 9×13 inch baking dish with butter or nonstick spray.
  7. Pour the corn mixture into the dish and spread it evenly.
  8. Bake for 35–40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Let the casserole cool for 10–15 minutes before serving.
  10. If desired, garnish with chopped chives or parsley.

Notes

  • Use freshly grated cheese for better melting and flavor.
  • To make ahead, prepare the batter and refrigerate for up to 24 hours before baking.
  • For a spicier twist, add diced jalapeños or a pinch of cayenne pepper.
