Ingredients

  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas
  • Salt and pepper, to taste

Instructions

  1. Slice the beef into thin strips and chop the bell peppers and onion into bite-sized pieces.
  2. Heat 1 tbsp olive oil in a skillet over medium heat; sauté the onions and bell peppers until softened and aromatic, about 7 minutes.
  3. Increase heat to medium-high and add the sliced beef to the skillet. Season with salt and pepper and cook until browned and cooked through, about 5 minutes.
  4. Reduce heat to low and place provolone cheese slices over the beef mixture. Let the cheese melt completely.
  5. Spoon the beef and cheese mixture onto each low-carb tortilla and roll tightly.
  6. Return the roll ups seam-side down to the skillet with remaining olive oil and cook until golden brown on all sides, about 4 minutes total.
