Ingredients

  • 3–4 pounds boneless turkey breast (skin-on recommended)
  • 2 large lemons (zest, juice, and sliced)
  • 6–8 cloves garlic, minced
  • 2 tablespoons fresh herbs (rosemary, thyme, and sage)
  • 3 tablespoons extra virgin olive oil
  • 1.5 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup white wine or chicken broth (optional)

Instructions

  1. Pat the turkey breast dry with paper towels and place it in a roasting pan.
  2. In a small bowl, mix the zest of one lemon, juice of half a lemon, minced garlic, chopped herbs, olive oil, salt, and pepper to form a paste.
  3. Rub the mixture all over the turkey breast, including under the skin for added flavor.
  4. Slice the remaining lemons and scatter them around the turkey in the pan.
  5. If using, pour the white wine or chicken broth into the bottom of the roasting pan.
  6. Preheat oven to 375°F (190°C) and roast the turkey breast for 90 minutes or until it reaches 165°F internal temperature.
  7. Baste with pan juices every 30 minutes if desired.
  8. Remove from oven and let rest for 15 minutes, tented with foil.
  9. Carve against the grain and serve with pan juices.
