Libby’s Pumpkin Pie Recipe

Libby’s Famous Pumpkin Pie is a classic holiday dessert known for its rich, spiced pumpkin filling and flaky crust. This easy-to-make pie is a Thanksgiving staple and delivers perfect results every time.

Ingredients

  • 1 (15 oz) can Libby’s® 100% Pure Pumpkin

  • 1 (14 oz) can evaporated milk

  • 3/4 cup granulated sugar

  • 2 large eggs

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground cloves

  • 1/2 tsp salt

  • 1 unbaked 9-inch deep-dish pie shell (homemade or store-bought)

Instructions

  1. Preheat the oven to 425°F (220°C). Place the unbaked pie shell on a baking sheet.
  2. In a large bowl, beat the eggs lightly.
  3. Stir in pumpkin, sugar, salt, cinnamon, ginger, and cloves until well combined.
  4. Gradually stir in evaporated milk until the mixture is smooth.
  5. Pour the filling into the pie shell and smooth the top.
  6. Bake at 425°F for 15 minutes.
  7. Reduce oven temperature to 350°F (175°C) and continue baking for 50 minutes or until a knife inserted near the center comes out clean.
  8. Remove from oven and cool on a wire rack for at least 2 hours before serving.

Notes

  • Don’t overbake—the center should look slightly jiggly when removed from the oven.
  • To prevent crust over-browning, cover edges with foil during the last 20 minutes.
  • Replace individual spices with 2 tsp pumpkin pie spice as a shortcut.
  • Swap white sugar for brown sugar for a richer flavor.
  • This pie can be made 1–2 days ahead and stored in the refrigerator.
