Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup freshly squeezed Meyer lemon juice (about 3 lemons)
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
  2. In a mixing bowl, cream the butter and powdered sugar until pale and fluffy.
  3. Add the flour and salt, mixing until a dough forms.
  4. Evenly press the dough into the prepared pan to create the crust.
  5. Bake for 15 to 20 minutes, until the edges start to turn golden.
  6. While the crust is baking, whisk together granulated sugar, eggs, flour, baking powder, lemon juice, and salt until smooth.
  7. Pour the lemon mixture over the hot crust, tapping the pan gently to release any bubbles.
  8. Return to the oven and bake for 20 to 25 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
  9. Cool completely in the pan before cutting into squares.
  10. Dust with powdered sugar before serving, garnishing with lemon slices if desired.
