Ingredients

  • 1 lb ground beef
  • 1 white onion, diced
  • 2 medium carrots, diced
  • 2 celery sticks, diced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1/2 cup red wine
  • 1 1/2 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 bay leaf
  • 1/2 cup frozen peas
  • 1/2 cup corn
  • 4 medium russet potatoes, peeled and chopped
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 1/2 cup parmesan cheese, divided
  • Salt and pepper to taste
  • Chopped parsley for topping

Instructions

  1. Dice the onion, carrots, and celery. Mince the garlic. Peel and chop the potatoes.
  2. Bring a large pot of salted water to a boil.
  3. In a large pan over medium heat, cook the ground beef until browned and no pink remains.
  4. Add the diced onion, carrot, and celery to the pan and cook for 5–7 minutes until softened.
  5. Add the garlic and tomato paste and cook for 1–2 minutes until fragrant.
  6. Deglaze with red wine and simmer for 2 minutes.
  7. Add beef broth, Worcestershire sauce, and bay leaf. Simmer on low for 10 minutes.
  8. Boil the potatoes in the salted water until fork-tender.
  9. Stir in frozen peas and corn into the meat mixture. Season with salt and pepper. Remove from heat.

  12. Layer the beef mixture in a baking dish. Top with mashed potatoes, pressing to the edges to seal.
  13. Create fork lines on top and sprinkle with remaining parmesan cheese.
  14. Bake uncovered for 30 minutes until golden brown.
  15. Top with chopped parsley and serve.

Notes

  • Use ground lamb instead of beef for a more traditional version.
  • Substitute red wine with beef broth and a splash of balsamic vinegar if avoiding alcohol.
  • Add a baking sheet under the dish in the oven to catch any overflow.
  • Customize vegetables to include mushrooms or green beans if desired.
