Slow Cooker Zuppa Toscana is a creamy, hearty Italian-inspired soup made with sausage, potatoes, garlic, kale, and a rich broth. This comforting dish is easy to prepare in a slow cooker, making it perfect for busy weeknights or cozy family dinners.

Ingredients

  • 1 pound Italian pork sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 medium potatoes, thinly sliced
  • 4 cups chicken broth
  • 2 cups water (as needed to cover potatoes)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup heavy cream
  • 2 cups chopped kale
  • Parmesan cheese, for garnish

Instructions

  • Heat a large skillet over medium-high heat. Cook sausage until browned and crumbly, about 5 to 7 minutes.
  • Add diced onion and minced garlic to the skillet; sauté until the onion is tender and translucent, 3 to 5 minutes. Drain and discard grease.
  • Place sliced potatoes in a slow cooker and add the cooked sausage and onion mixture.
  • Season with salt, black pepper, and red pepper flakes.
  • Pour in chicken broth and up to 2 cups of water to completely cover the potatoes. Stir gently and cover.
  • Cook on Low for 5 to 6 hours or on High for 3 to 4 hours.
  • Pour in heavy cream and stir in chopped kale to combine. Cover and cook on High for about 30 minutes more, until flavors are fully incorporated.
  • Garnish with Parmesan cheese before serving.
