Snickerdoodle Apple Pie Bites

Snickerdoodle Apple Pie Bites are bite-sized desserts made with snickerdoodle cookie cups filled with sweet apple pie filling. They’re simple to prepare, full of warm cinnamon flavor, and perfect for holidays, parties, or anytime you crave a comforting treat.

Ingredients

  • 1 package (17–18 oz) Snickerdoodle Cookie Mix
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 can (21 oz) apple pie filling, chopped into small pieces
  • Caramel ice cream topping (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and coat a mini muffin tin with non-stick cooking spray.
  2. In a large bowl, mix together the snickerdoodle cookie mix, softened butter, and egg until a soft dough forms. Knead by hand if needed.
  3. Pour the cinnamon-sugar mixture from the cookie mix into a small bowl.
  4. Using a tablespoon scoop, roll the dough into 24 balls and coat each in the cinnamon-sugar mixture.
  5. Place each ball into the prepared mini muffin pan and bake for 10–12 minutes, until the edges are lightly golden brown.
  6. Immediately after baking, use the back of a spoon to press down the center of each cookie, forming a small cup.
  7. Let cool for 3–5 minutes, then gently remove the cookie cups from the pan and place them on a wire rack to cool completely.
  8. Fill each cookie cup with a spoonful of chopped apple pie filling.
  9. Sprinkle additional cinnamon sugar on top and drizzle with caramel ice cream topping if desired.

Notes

  • For a homemade touch, use homemade snickerdoodle dough or apple pie filling.
  • To prevent sogginess, fill cookie cups just before serving.
  • You can substitute different cookie mixes and pie fillings, such as sugar cookie mix with cherry pie filling or gingerbread cookie mix with peach filling.
  • Serve warm with vanilla ice cream or whipped cream for extra indulgence.
