Tater Tot Sausage Breakfast Casserole - Plain Chicken

A hearty and comforting breakfast dish featuring layers of crispy tater tots, savory sausage, and melty cheese baked in a seasoned egg mixture. Perfect for make-ahead meals, holiday mornings, or feeding a crowd.

Ingredients

  • 2 lb hot breakfast sausage
  • 1 (30–32 oz) bag frozen tater tots
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 8 large eggs
  • 2 cups milk

Instructions

  1. Preheat oven to 350ºF and lightly spray a 9×13-inch baking dish with cooking spray.
  2. In a large skillet, cook the sausage until no longer pink. Drain the fat.
  3. In a large bowl, combine frozen tater tots, cooked sausage, cheddar cheese, and mozzarella cheese.
  4. Spread the mixture evenly into the prepared baking dish.
  5. In another bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
  6. Pour the egg mixture evenly over the sausage and tater tot mixture.
  7. Bake uncovered for 70 minutes or until the eggs are fully set and the top is golden brown.

Notes

  • You can assemble the casserole in advance and refrigerate or freeze it before baking.
  • If baking after refrigeration, you may need to add extra minutes to the cooking time.
  • To freeze: thaw completely in the refrigerator before baking as directed.
  • For reheating, cover with foil and bake at 350ºF for 30–40 minutes until heated through.
