Ingredients

  • 1 turkey (12–14 lbs)
  • 2 cups stuffing
  • 1 cup cranberry sauce
  • 4 cups mixed vegetables
  • 1 cup pumpkin puree
  • 1 cup heavy cream
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 cup brown sugar
  • Salt and pepper to taste
  • Fresh herbs (rosemary or thyme) for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pat the turkey dry with paper towels and season generously with salt and pepper inside and out.
  3. Stuff the turkey with the prepared stuffing mixture, placing any extra in a separate baking dish.
  4. Place the turkey breast-side up in a roasting pan and cover loosely with foil.
  5. Roast the turkey for about 3 hours, removing the foil for the last 30 minutes to brown the skin.
  6. Check that the internal temperature reaches 165°F (74°C) in the thickest part of the breast.
  7. Let the turkey rest for 20 minutes before carving.
  8. While the turkey roasts, bring a pot of salted water to a boil and cook the mixed vegetables for 5–7 minutes until tender yet crisp. Drain and set aside.
  9. In a mixing bowl, combine pumpkin puree, heavy cream, cinnamon, nutmeg, and brown sugar. Stir until smooth.
  10. Pour the pumpkin mixture into a baking dish and bake for 30 minutes until set and lightly golden.
  11. Serve the carved turkey with stuffing, cranberry sauce, vegetables, and pumpkin dish.
