  • 2 medium ripe bananas, mashed (about 1 cup)

Method
 

Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat the butter and sugar until the mixture is light and fluffy, about 5–7 minutes.
  3. Mix in the eggs, sour cream, and vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Fold in the mashed bananas gently.
  7. Spread the batter evenly into a greased 15x10x1-inch baking pan.
  8. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Don’t overbake.
  9. Let the bars cool completely.
  10. To make the frosting, beat the cream cheese, butter, and vanilla extract until smooth and fluffy.
  11. Gradually add in the confectioners’ sugar until the frosting reaches your desired consistency.
  12. Spread the frosting over the cooled banana bars and serve.
