- Preheat the oven to 350°F (175°C).
- In a large bowl, beat the butter and sugar until the mixture is light and fluffy, about 5–7 minutes.
- Mix in the eggs, sour cream, and vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the mashed bananas gently.
- Spread the batter evenly into a greased 15x10x1-inch baking pan.
- Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Don’t overbake.
- Let the bars cool completely.
- To make the frosting, beat the cream cheese, butter, and vanilla extract until smooth and fluffy.
- Gradually add in the confectioners’ sugar until the frosting reaches your desired consistency.
- Spread the frosting over the cooled banana bars and serve.
