  • 1 pound Pasta (e.g., penne, rotini)
  • 2 cups Corn (fresh or frozen)
  • 1 Red bell pepper diced
  • 1/2 Red onion diced
  • 1/4 cup Cilantro chopped
  • 1/2 cup Cotija cheese crumbled
  • 1/2 cup Mayonnaise
  • 1/4 cup Sour cream
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Garlic powder
  • Salt to taste
  • Black pepper to taste

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. If using fresh corn, grill or pan-sear until slightly charred. If using frozen corn, thaw.
  3. In a large bowl, combine cooked pasta, corn, red bell pepper, and red onion.
  4. In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper.
  5. Pour dressing over pasta mixture and toss to combine.
  6. Gently fold in cilantro and cotija cheese.
  7. Serve chilled.
