Ingredients
  • 8 oz mascarpone cheese chilled
  • 1/2 cup Biscoff cookie butter at room temperature
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract (optional)
  • Pinch salt (optional)
  • 2 cups heavy whipping cream cold
  • 50–60 Biscoff cookies
  • 1 1/2 cups strong brewed coffee or espresso

Equipment

  • Mixing bowls
  • Hand or stand mixer
  • Measuring cups and spoons
  • Spatula
  • Serving dish (8x8 inch pan or 4 individual dessert cups)
  • Spoon for dipping cookies

Method

Instructions
  1. Place mascarpone, cookie butter, sugar, vanilla, and salt into a bowl. Whip briefly until smooth and creamy, taking care not to overmix.
  2. Pour in the chilled cream and beat the mixture on medium speed until it holds stiff peaks. Scrape down sides as needed to ensure it's fully blended.
  3. Dip each Biscoff cookie into the brewed coffee for 1–2 seconds and place a layer at the bottom of your chosen serving dish or cups.
  4. Spread half of the cream mixture evenly over the cookie layer.
  5. Repeat with another dipped cookie layer followed by the rest of the cream mixture. Smooth the top or pipe for decoration if desired.
  6. Refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set.
  7. Before serving, sprinkle with crushed Biscoff cookies and drizzle with warm cookie butter for extra flavor and texture.
