- Place mascarpone, cookie butter, sugar, vanilla, and salt into a bowl. Whip briefly until smooth and creamy, taking care not to overmix.
- Pour in the chilled cream and beat the mixture on medium speed until it holds stiff peaks. Scrape down sides as needed to ensure it's fully blended.
- Dip each Biscoff cookie into the brewed coffee for 1–2 seconds and place a layer at the bottom of your chosen serving dish or cups.
- Spread half of the cream mixture evenly over the cookie layer.
- Repeat with another dipped cookie layer followed by the rest of the cream mixture. Smooth the top or pipe for decoration if desired.
- Refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set.
- Before serving, sprinkle with crushed Biscoff cookies and drizzle with warm cookie butter for extra flavor and texture.
