  • 1 9 inch pie crust
  • 3 large eggs
  • 1 cup corn syrup (light or dark)
  • 1/2 cup packed brown sugar
  • 1/4 cup melted unsalted butter
  • 1/4 cup bourbon
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 1/2 – 2 cups pecan halves

Instructions
  1. Preheat oven to 425°F. Place pie crust in pie pan and chill until filling is ready.
  2. Mix corn syrup, eggs, sugar, butter, bourbon, salt and cornstarch in a medium sized bowl. Stir in pecans. Pour into prepared pie crust.
  3. Place pie on a baking sheet and cover with a pie shield or strips of foil.
  4. Bake at 425°F for 10 minutes then lower the oven temperature to 350°F and bake an additional 35-40 minutes or until pie is slightly puffed and just a bit jiggly in the center.
  5. Cool completely before slicing.
