  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup yellow bell pepper, diced
  • ½ cup red onion, finely chopped
  • ½ cup black olives, sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper, to taste

Method
 

Instructions
  1. Cook pasta, rinse with cold water, pat dry.
  2. Chop vegetables and crumble feta.
  3. Toss pasta, vegetables, feta, olives, and parsley in a large bowl.
  4. Whisk dressing, pour over salad, mix gently, and chill at least 30 minutes before serving.
