  • 1 1/2 to 2 cups Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 3/4 to 1 teaspoon salt, divided
  • Freshly cracked black pepper, to taste (optional)
  • 1 teaspoon lemon zest (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon dried herbs (oregano, thyme, or parsley) (optional)
  • Olive oil or cooking oil spray (optional)

Method
 

Instructions
  1. Rinse the asparagus and pat dry. Trim the woody ends.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Set up a breading station with flour, beaten eggs, and the breadcrumb mixture.
  4. Bread the asparagus by rolling in flour, dipping in eggs, and coating with breadcrumbs. Place on the baking sheet.
  5. Lightly spray or brush the tops with olive oil.
  6. Bake for 15-20 minutes, until golden and crispy. Optionally broil for the last 1-2 minutes.
  7. Serve warm with a squeeze of lemon and your favorite dip.
