- In a medium bowl, combine softened cream cheese with minced spring onion, chopped chives, lemon juice, lemon zest, and freshly cracked black pepper. Mix until smooth and creamy.
- Wash cucumbers under cold water, then slice into half-inch thick rounds. Pat each slice dry with a paper towel.
- Arrange dried cucumber slices on a serving platter. Spread an even layer of cream cheese mixture over each cucumber slice.
- Place a slice of smoked salmon on top of each cream cheese-covered cucumber. Fold or roll the salmon for presentation.
- Sprinkle extra cracked black pepper and chopped chives over each bite. Drizzle with fresh lemon juice if desired. Serve immediately.
