  • 1 can (20 oz) pineapple chunks drained
  • 1 can (15 oz) mandarin oranges drained
  • 1 cup maraschino cherries halved and patted dry
  • cups sweetened shredded coconut
  • 2 cups Easter bunny marshmallows
  • 1 cup mini marshmallows (optional)
  • 1 cup heavy whipping cream
  • ½ cup sour cream
  • 1 teaspoon vanilla extract

  • Hand mixer or stand mixer
  • Rubber spatula
  • Paper towels
  • Plastic wrap or an airtight container

Method
 

Instructions
  1. Drain pineapple and mandarin oranges very well. Pat cherries dry.
  2. In a large bowl, whip heavy cream until soft peaks form.
  3. Gently fold in sour cream and vanilla until smooth.
  4. Add pineapple, mandarin oranges, cherries, coconut, and marshmallows.
  5. Fold gently until fully combined.
  6. Cover and refrigerate for at least 1 hour before serving.
