  • 8 oz. mozzarella pearls (mini mozzarella balls)
  • 1-2 medium avocados, diced
  • cup fresh basil, thinly sliced
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic glaze *
  • Salt to taste
  • Cracked black pepper to taste
  • ½ cup balsamic vinegar
  • 1-2 Tbsp maple syrup, honey, or brown sugar (depending on desired sweetness)

  1. In a large bowl, combine the halved cherry tomatoes, mozzarella pearls, diced avocado, and thinly sliced basil. This mixture forms the base of the fresh and vibrant salad.
  2. Drizzle the extra virgin olive oil and balsamic glaze over the salad ingredients. Season with salt and cracked black pepper according to your taste preferences.
  3. Gently toss the salad until all ingredients are evenly coated with the olive oil and balsamic glaze. Taste and adjust the seasoning if necessary to achieve your desired balance of flavors.
  4. Garnish the salad with extra sliced basil leaves for a fresh presentation. Serve immediately for best texture and flavor. Alternatively, chill the salad in the refrigerator for 30 minutes before serving to let the flavors meld.
  5. In a small pot, whisk together ½ cup balsamic vinegar and 1-2 tablespoons of your chosen sweetener (maple syrup, honey, or brown sugar). Bring the mixture to a boil over medium-high heat.
  6. Reduce the heat to medium-low and let the mixture simmer for 8-10 minutes, stirring occasionally. The glaze should reduce slightly and thicken enough to lightly coat the back of a spoon.
  7. Transfer the glaze to a small glass bowl and allow it to cool completely—the glaze will thicken further as it cools. Once cooled, pour it into a glass jar or bottle and refrigerate until ready to use.
