  • 2 tbsp Lime juice (fresh is best)
  • 2 tbsp Chipotle chili powder or adobo sauce
  • 1 tbsp Smoked paprika
  • 1 tsp Ground cumin
  • 1 tsp Salt and black pepper
  • 1 cup Ranch dressing (use your favorite brand)
  • 2 tbsp Chipotle peppers in adobo sauce
  • 2 tbsp Lime juice
  • 1 tsp Garlic powder
  • Salt (to taste)
  • 2 cups Grilled chicken, sliced
  • 1 cup Fresh chopped tomatoes
  • 1 cup Diced red onion
  • 1/2 cup Fresh cilantro leaves
  • Jalapeño slices or chopped green chili (optional)
  • 1 cup Lettuce or spinach (optional)
  • 1 cup Shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 Sliced avocado or a scoop of guacamole
  • 1 cup Cooked rice (white, brown, or cilantro-lime rice)

  1. 1. Marinate the Chicken: Whisk together olive oil, lime juice, garlic, chipotle powder (or adobo sauce), paprika, cumin, salt, and pepper. Coat your chicken thoroughly and let it marinate for at least 30 minutes—or better yet, overnight for extra flavor.
  2. 2. Grill the Chicken: Heat a grill or grill pan over medium-high heat. Cook chicken until it's golden with char marks and fully cooked (internal temp of 165°F). Let it rest for 5 minutes, then slice thinly.
  3. 3. Blend the Chipotle Ranch Sauce: In a blender, combine ranch dressing, chipotle peppers, lime juice, garlic powder, and salt. Blend until smooth and creamy. Taste and adjust spice or salt if needed.
  4. 4. Assemble the Burrito: Warm tortillas on a skillet or in the microwave for a few seconds. Lay down a scoop of rice (if using), sliced grilled chicken, tomatoes, onion, cilantro, cheese, lettuce, avocado, and a generous drizzle of chipotle ranch. Wrap it up snugly and enjoy warm.
