  • 15 oz raw broccoli florets
  • 1 whole egg
  • 2 egg whites
  • 1/3 cup grated parmesan
  • 1/3 cup flour (of choice)
  • 1 tbs olive oil
  • salt and pepper (to taste)
  • 6 tbs marinara sauce
  • 1 cup shredded mozzarella
  • toppings of choice: olives, pepperoni
  • garnish: chili pepper flakes + parsley

Method
 

Instructions
  1. Preheat oven to 400 ℉. Line a medium rimmed sheet pan with parchment paper.
  2. Add broccoli, egg, egg whites, parmesan, flour, olive oil, salt and pepper to taste to your food processor and pulse until uniform integrated mixture forms. Scoop out about 1/3 cup of the mixture and form patties. Transfer to your sheet pan and flatten out to 1/4 inch thickness. Bake for 25 minutes. Remove from oven top each with 1 tbs sauce, mozzarella and toppings if using. Place pan back in the oven to allow cheese to melt.
