- Pour the vegetable or coconut oil into a large, heavy-bottomed skillet or cast-iron pan to a depth of about 1 inch. Heat over medium-high heat until it reaches 365°F.
- Wash and dry the apples. Slice each apple crosswise into ¼-inch-thick rings. Remove the core and seeds from each slice, leaving about ⅜ inch of apple surrounding the center hole. Set aside.
- In a small, shallow bowl, combine the ⅓ cup of sugar and ground cinnamon. Whisk until evenly blended and set aside.
- In a medium mixing bowl, lightly beat the egg. Gradually whisk in the milk and vanilla extract. Add the flour, 2 tablespoons of sugar, baking powder, and salt. Whisk until a smooth batter forms with no dry lumps.
- Using tongs, dip each apple ring into the batter, allowing the excess to drip back into the bowl. Carefully place 3 or 4 battered rings into the hot oil without overcrowding the pan.
- Fry for 1 to 2 minutes per side, or until deep and evenly golden brown.
- Remove the fried apple rings from the oil and place them on a wire rack or a paper towel-lined plate to drain for about 1 minute.
- While still warm, dredge each ring in the cinnamon-sugar mixture, turning to coat both sides evenly.
- Serve warm on their own or with maple syrup or caramel sauce for dipping.
