  • 2 large chicken breasts (boneless, skinless)
  • 3 medium zucchini (sliced into rounds)
  • 5 cups jasmine rice (uncooked)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 5 tsp onion powder
  • 5 tsp dried oregano
  • 1 tsp salt (plus more to taste)
  • 0.5 cup Greek yogurt (or mayonnaise)
  • 0.25 cup fresh herbs (parsley, cilantro, or basil)
  • 1 tbsp lemon juice
  • 1 clove garlic (minced)
  • 1 tbsp water (to thin sauce)

Method
 

Instructions
  1. Cook rice according to package instructions until fluffy.
  2. Mix paprika, garlic powder, onion powder, oregano, salt, and pepper. Rub over chicken breasts.
  3. Toss zucchini rounds with olive oil, salt, and pepper.
  4. Preheat grill or grill pan to medium-high heat. Grill chicken 5-6 mins per side until cooked through (165°F).
  5. Grill zucchini 3-4 mins per side until charred but tender.
  6. Whisk yogurt, minced garlic, lemon juice, chopped herbs, and water until smooth.
  7. Slice chicken. Assemble bowls with rice, chicken, and zucchini. Drizzle generously with sauce.
