  • 1 large ripe mango, peeled, pitted, and diced
  • 1 small jalapeño, deseeded and finely chopped (optional for spice)
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt, to taste

  1. Marinate the shrimp: In a bowl, combine the olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add the shrimp to the bowl and toss to coat. Cover and refrigerate for at least 15-30 minutes to marinate.
  2. Prepare the mango salsa: While the shrimp is marinating, prepare the mango salsa. In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt. Stir gently to combine. Taste and adjust seasoning if necessary.
  3. Grill the shrimp: Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 10 minutes before use).
  4. Grill the shrimp for 2-3 minutes per side, or until they are pink, opaque, and cooked through. Remove from the grill.
  5. Serve: Serve the grilled shrimp immediately with a generous spoonful of mango salsa on top. Garnish with extra cilantro if desired.
