  • 1/2 cup almond flour, packed
  • 1 tablespoon melted coconut oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/8 teaspoon salt
  • 1/4 teaspoon pure vanilla extract
  • 1 tablespoon lemon zest
  • 1 tablespoon maple syrup
  • 3 tablespoons white chocolate chips, optional
  • Optional coating: shredded coconut, powdered sugar, or melted white chocolate

Instructions
  1. In a mixing bowl, stir together the almond flour and salt.
  2. Add the lemon zest, lemon juice, vanilla, melted coconut oil, and maple syrup. Mix until a soft dough forms.
  3. If using, melt the white chocolate chips and fold them into the mixture.
  4. Refrigerate the dough for about 20 minutes to firm it up.
  5. Once chilled, scoop out small portions and roll them into balls using your hands.
  6. Optional: Roll each truffle in powdered sugar, coconut flakes, or dip them in melted white chocolate for a coating.
  7. Place finished truffles back in the fridge until set.
