  • 2 cups hummus (homemade or store bought)
  • 3 oz crumbled feta cheese (approx. 3/4 cup)
  • 1 cup finely chopped tomato
  • ½ cup finely chopped English cucumber
  • ¼ cup chopped green onion
  • 2 TBSP quality olive oil or avocado oil
  • 2 tsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp dried basil
  • tsp garlic powder
  • tsp dried oregano leaves
  • sweet paprika (for topping)
  • extra virgin olive oil (for drizzling)
  • sliced olives
  • chopped marinated artichoke
  • chopped banana pepper
  • sun-dried tomatoes
  • dried or fresh dill
  • fresh parsley
  • freshly ground black pepper

Method
 

Instructions
  1. Finely chop cucumber and tomatoes. Thinly slice green onion.
  2. Whisk together olive oil, lemon juice, and spices in a medium bowl.
  3. Add veggies, herbs, and crumbled feta to the bowl mix well. Set aside for flavors to marinate.
  4. Spread hummus on a serving platter. Sprinkle with paprika and drizzle with extra virgin olive oil.
  5. Ready to dive in? Add feta and veggie mixture to the hummus and serve with your choice of tasty dippers. (see notes) Enjoy!
