  • ½ cup unsalted butter, melted
  • 24 oz full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • cups heavy whipping cream, cold
  • ½ cup Lotus Biscoff spread, softened
  • ¾ cup Lotus Biscoff spread
  • 8–10 Lotus Biscoff cookies, crushed
  • Whole Lotus Biscoff cookies for decorating
  • ½ cup unsalted butter, softened
  • cups powdered sugar
  • ¼ cup Lotus Biscoff spread
  • 1–2 tablespoons heavy cream
  • Pinch of salt

Method
 

Instructions
  1. Mix the Biscoff cookie crumbs with the melted butter until evenly combined.
  2. Firmly press the mixture into the bottom of a 9×13-inch baking dish. Refrigerate for 20 minutes.
  3. Beat the cream cheese until smooth and creamy.
  4. Add the powdered sugar, vanilla, and softened Biscoff spread, mixing until well combined.
  5. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cheesecake mixture until light and fluffy.
  7. Spread the filling evenly over the chilled crust and smooth the top.
  8. Melt the Biscoff spread in the microwave for 15–20 seconds until pourable. Pour it over the cheesecake and spread into an even layer.
  9. Chill for at least 6 hours, preferably overnight, until fully set.
  10. For the buttercream, beat the butter until fluffy. Add the powdered sugar, Biscoff spread, salt, and enough heavy cream to create a smooth piping consistency.
  11. Pipe decorative swirls around the edges, sprinkle the center with crushed Biscoff cookies, and place a whole Biscoff cookie in the middle before serving.
