  • 1/2 cup vanilla Greek yogurt
  • 1/4 cup packed light brown sugar

  1. Set your oven to preheat at 350°F and place paper liners into 10 cups of a muffin pan.
  2. In a medium mixing bowl, stir together the flour, rolled oats, baking powder, baking soda, and salt until combined.
  3. In a separate larger bowl, whisk the egg with the milk, maple syrup, yogurt, and brown sugar until the mixture is smooth.
  4. Gradually add the dry ingredients to the wet, stirring gently just until everything is incorporated. Avoid overmixing.
  5. Divide the batter evenly into the 10 prepared muffin cups, using about 1/4 cup of batter per muffin.
  6. Bake in the preheated oven for 16 to 18 minutes, or until a toothpick inserted in the center comes out clean.
