  • 8 ounces semi-sweet chocolate chips
  • 3/4 cup white granulated sugar
  • 3/4 cup brown sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 3/4 cup all purpose flour
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp peppermint extract
  • Green food dye for color
  • 1/2 cup heavy cream, warmed
  • 1 cup semi-sweet chocolate chips

Instructions
  1. Preheat the oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper.
  2. In a microwave-safe bowl, melt the butter and pour over the chocolate chips in a mixing bowl. Whisk together until melted.
  3. Add in the granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  4. Add the flour and salt, mixing until just combined.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs. Let cool completely before frosting.
  7. In a mixing bowl, beat the softened butter until creamy.
  8. Gradually add powdered sugar, milk, peppermint extract, and green food dye, mixing until smooth and fluffy.
  9. Spread the mint frosting evenly over the cooled brownies.
  10. In a small saucepan or microwave-safe bowl, warm the heavy cream until just hot (not boiling).
  11. Pour the warm cream over the chocolate chips and let sit for a minute, then stir until smooth.
  12. Spread the ganache over the mint frosting and smooth it out evenly.
  13. Chill the brownies in the fridge for at least 15 minutes before slicing.
  14. Cut into squares and enjoy!
