  • 2.25 cups flour (I always use King Arthur all-purpose flour)
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 3/4 cup butter (I like Kerrygold unsalted butter for this)
  • 1 cup buttermilk (room temperature, about 70°F)
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup strawberries (hulled and diced into 1/2-inch pieces)
  • 1/2 cup chocolate chips (I prefer Ghirardelli semi-sweet)

Method
 

Instructions
  1. Preheat your oven and line a baking tray with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients—flour, sugar, baking powder, baking soda, and salt.
  3. Add cold, cubed butter and work it into the flour mix until it looks like rough, sandy crumbs with some pea-sized bits left.
  4. In a separate bowl, whisk together buttermilk, egg, and vanilla extract. Pour this mixture over the dry ingredients.
  5. Using a fork or spatula, stir until a soft dough starts to form.
  6. Scatter in the diced strawberries and chocolate chips. Fold them through the dough, trying to avoid squashing the berries.
  7. Turn the dough out onto a floured work surface. With floured hands, gently pat it into a thick, round disk.
  8. Slice the disk into wedges and transfer onto your parchment-lined tray, leaving space between them.
  9. Bake until puffed and the tops are lightly golden.
  10. Let cool on the tray for a few minutes before transferring to a wire rack.
