No-Bake Peanut Butter Pretzel Clusters

  • 3 cups mini pretzels, roughly broken
  • ½ cup creamy peanut butter
  • ½ cup honey or light corn syrup
  • ¼ cup brown sugar
  • 2 tablespoons butter
  • ½ teaspoon vanilla extract
  • cups white chocolate chips or melting wafers
  • 1 tablespoon coconut oil
  • Flaky sea salt, for topping

Method
 

Instructions
  1. Line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine peanut butter, honey (or corn syrup), brown sugar, and butter. Stir until melted and gently bubbling.
  3. Remove from heat and stir in vanilla extract.
  4. Add the broken pretzels and gently fold until every piece is coated in the glossy caramel mixture.
  5. Scoop large, tall clusters onto the prepared baking sheet using a ¼-cup scoop. Do not flatten. Let cool slightly for 10–15 minutes.
  6. Melt white chocolate and coconut oil in a microwave-safe bowl in 20–30 second intervals, stirring until smooth and creamy.
  7. Let the melted white chocolate cool for about 1 minute, then drizzle over each cluster.
  8. Immediately sprinkle flaky sea salt on top while the chocolate is still wet.
  9. Let the clusters set at room temperature or refrigerate until firm.
