- Line a baking sheet with parchment paper.
- In a saucepan over medium heat, combine peanut butter, honey (or corn syrup), brown sugar, and butter. Stir until melted and gently bubbling.
- Remove from heat and stir in vanilla extract.
- Add the broken pretzels and gently fold until every piece is coated in the glossy caramel mixture.
- Scoop large, tall clusters onto the prepared baking sheet using a ¼-cup scoop. Do not flatten. Let cool slightly for 10–15 minutes.
- Melt white chocolate and coconut oil in a microwave-safe bowl in 20–30 second intervals, stirring until smooth and creamy.
- Let the melted white chocolate cool for about 1 minute, then drizzle over each cluster.
- Immediately sprinkle flaky sea salt on top while the chocolate is still wet.
- Let the clusters set at room temperature or refrigerate until firm.
