- Wash and dry the strawberries thoroughly. Make sure every berry is completely dry before dipping; moisture can cause the chocolate to seize or slip right off.
- Melt the white chocolate until it’s smooth and glossy. Dip each strawberry into the melted chocolate, holding the stem and swirling to coat most of the berry. Let extra chocolate drip off for a neat finish.
- While the chocolate is still soft, sprinkle blue sprinkles on the bottom half of each strawberry. The color contrast pops best when you focus on one end—try gently rolling that side over a plate of sprinkles for even coverage.
- Arrange the decorated berries on a sheet of parchment paper. Leave them out until the chocolate sets firm and the sprinkles stay put. Once set, your strawberries are ready to serve or chill.
