  • 1 cup mashed ripe bananas (about 3 medium or 2 large)
  • 1/2 cup creamy or crunchy peanut butter
  • 1/4 cup coconut sugar or brown sugar
  • 1/4 cup unsweetened applesauce
  • 1/2 cup almond milk or any milk of choice
  • 2 and 1/2 cups rolled oats or quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions
  1. Preheat the oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, leaving extra on the sides to help lift the bars later.
  2. Mash the bananas in a large bowl or use a mixer until smooth.
  3. Add peanut butter, applesauce, almond milk, vanilla, and sugar. Stir until everything is combined.
  4. Mix in the oats, baking powder, cinnamon, and salt. Stir well, then fold in the chocolate chips.
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 25 to 28 minutes, or until the center is set but still soft.
  7. Let the bars cool at room temperature for 30 to 60 minutes, then chill in the fridge for another hour to firm up before slicing.
  8. Lift out the bars using the parchment overhang and cut into squares.
