- Preheat the oven to 375°F / 190°C and line a baking sheet with parchment paper.
- In a skillet over medium heat, cook the diced bell peppers and onion until softened.
- Add the thin sliced steak or roast beef and cook until warm and tender.
- Season with black pepper and stir until the meat and vegetables are evenly mixed.
- Remove the skillet from the heat and let the filling cool for a few minutes.
- Stir in the provolone cheese and cream cheese, if using, until evenly combined.
- Unroll the crescent dough and separate it into triangles.
- Spoon some of the cheesesteak mixture onto the wider end of each triangle without overfilling.
- Starting at the wide end, roll each triangle toward the pointed end.
- Place the filled crescent rolls on the prepared baking sheet with space between them.
- Bake for 16 minutes, or until golden brown and fully baked.
- Let the rolls cool for a few minutes before serving.
